UK Summer Chef Jobs 2026: Where Hospitality Pays Best From May to September

Coastal towns, holiday parks, festivals and cruise lines all hire heavily from May. Here is what each pays this year, and where to apply now.

The UK summer hospitality season is a four-month sprint that pays better than most chefs realise. Restaurants and venues that are quiet from October to April suddenly need every kitchen pair of hands they can get. If you are open to a temporary contract, you can earn close to a full year's salary in those four months — sometimes with accommodation included.

We pulled together what you can realistically earn this summer in each segment, where the demand is, and when to apply.

Coastal hotspots: Cornwall, Devon, Bournemouth, Brighton

The British seaside still drives a huge chunk of summer hospitality demand. Towns like Bournemouth, Brighton, Newquay, St Ives and Padstow double or triple their visitor count between June and September.

Realistic pay this season:

  • Sous Chef in a coastal gastropub: £14–18 per hour (often with tips on top)
  • Chef de Partie in a busy seafood restaurant: £13–16 per hour
  • Head Chef for a seasonal pop-up or beach restaurant: £45,000–£60,000 pro-rata
  • Pastry Chef for boutique hotels: £14–17 per hour

When to apply: Now. Most coastal venues finalise their summer kitchen team by mid-May. Late applications get the leftover shifts.

Holiday parks: Butlin's, Haven, Center Parcs, Pontins

Holiday parks are the underrated giants of UK summer hospitality. Butlin's alone runs three resorts (Bognor Regis, Minehead, Skegness) with 30+ kitchens between them. Haven has 39 parks. Center Parcs has six.

Why they are worth a look:

  • Stable hours — parks run on schedules, not the chaos of a busy restaurant
  • Accommodation included — free or heavily subsidised on-site staff housing solves the "where do I live" problem
  • Volume cooking experience — great for CV if you want to move into hotels or contract catering later
  • Predictable pay structure — usually pay scales rather than negotiated rates

Realistic pay:

  • Commis Chef: £12–13.50 per hour + accommodation
  • Chef de Partie: £13–15 per hour + accommodation
  • Sous Chef: £15–18 per hour + accommodation
  • Kitchen Manager: £35,000–£42,000 pro-rata + accommodation

When to apply: Some parks are still hiring into July, but the best shifts go in March-May.

Festival season: Glastonbury, Goodwood, Boomtown, food festivals

Festival catering is short, intense, and well paid. You typically work 12–16 hour days for 4–7 days, then go home with a meaningful pay packet.

Realistic pay:

  • Festival prep cook: £130–170 per day
  • Line cook: £150–200 per day (more if leading a section)
  • Section chef / sous: £200–280 per day
  • Head chef of a vendor stand: £300–400 per day or revenue share

The best route in is to find a specific festival vendor (street food brand, catering company) and apply directly. Most do their hiring in March–May.

Cruise ships

Cruise lines like P&O, Cunard, MSC and Royal Caribbean are still actively hiring British chefs for summer Mediterranean and Caribbean rotations. Contracts are usually 3–6 months. Pay is in USD or EUR.

Typical structure:

  • Junior chef: $1,800–2,400 per month + free accommodation, food, no cost of living
  • Sous chef: $3,000–4,500 per month
  • Head chef: $5,500–8,000 per month
  • Executive chef: $8,000–12,000 per month

The numbers look modest until you factor in zero accommodation costs, free food, and tax-friendly residency rules. Take-home savings of £15–25k over a 6-month contract are realistic.

How to position yourself this season

Three things separate chefs who get great summer contracts from those who scramble:

  1. Apply early. The window is March–May. Job boards fill out by June.
  2. Have a clean, current CV. Most summer hires are decided in 24–48 hours.
  3. Be flexible on location and accommodation. The chefs who say "anywhere in the South West, will travel" land contracts the others miss.
