We are seeking a talented Head Chef with strong expertise in authentic Japanese cuisine, particularly sashimi, nigiri, and sushi preparation, alongside proven leadership experience in high-volume, quality-driven environments.

The RoleAs Head Chef, you will be responsible for launching and leading all kitchen operations, ensuring exceptional food quality, consistency, and guest satisfaction from day one.

Key Responsibilities Lead and manage all kitchen operations for the new restaurant opening

Develop, maintain, and execute high-quality Japanese menus and specials

Demonstrate expert knowledge and preparation of sashimi, nigiri, sushi, and traditional Japanese dishes

Recruit, train, mentor, and develop a high-performing kitchen team

Maintain exceptional food presentation, quality, and consistency standards

Manage stock control, ordering, supplier relationships, and food cost targets

Ensure compliance with all food safety, hygiene, and health & safety regulations

Work closely with senior management on menu development and business growth initiatives

Drive kitchen efficiency while maintaining outstanding culinary standards

About YouEssential Requirements Previous experience as a Head Chef or Senior Sous Chef within a Japanese restaurant environment

Strong expertise in sashimi, nigiri, sushi, and traditional Japanese cooking techniques

Proven ability to lead and develop successful kitchen teams

Excellent knowledge of food safety and kitchen management

Strong organisational and financial management skills

Passion for delivering exceptional guest experiences

Ability to thrive in a fast-paced opening environment

Desirable Experience opening new restaurant concepts

Multi-site or branded restaurant experience

Knowledge of contemporary Japanese dining trends
